Made in Holland for California's Cypress Grove Farm, this is a firmer goat cheese that's aged six months or more. It's nutty and brown, buttery up front, with a long caramel finish. Similar to a Gouda, protein crystals form as it ages and lend a slight crunch to the otherwise dense and smooth cheese. Midnight Moon does not have the tang often associated with goat cheese. It's surprising and delicious. 3.75 oz.
