Blakesville Creamery of Port Washington is making some of the most delicious goat cheeses we've ever tried. We have an assortment including:
Afterglow: A washed-rind lactic cheese inspired by Langres. Washed with New Glarus Wisconsin Belgian Red, an ale made with Door County cherries.
Lake Effect: A soft-ripened goat cheese with a bloomy rind. The flavor is buttery, mushroomy and the aroma is reminiscent of a walk in the woods. Cheeses are slightly firm when young, with the interior breaking down into a nice cream-line after a few weeks of aging.
Truffle Shuffle: Sporting a line of Abruzzese Truffle Tapenade, it also receives a dash of truffled Sicilian sea salt. The result is a bright, earthy, and mushroom forward goat cheese with plenty of umami to spare. Limited quantity.
Holiday Cheer: Inspired by the Wisconsin Old Fashioned, Blakesville’ starts with a puck of chèvre that is flecked with orange zest and hand wrapped in Japanese Sakura (cherry) leaves. These cherry leaves have been macerated in Korbel Brandy. The flavor of this cheese is refreshing, a little sweet, bright, and citrusy. Limited quantity.
